Skillet Breakfast Pizza


Have I ever told you how much I love breakfast? I do. I could eat breakfast for every meal and never get tired of it.

Breakfast feeds the soul. One of my favorite meals is cooking up a hearty breakfast with biscuits, eggs, and bacon on a cold winter night. It's comfort food to the max.

So why not combine these favorite foods into one dish? Not breakfast casserole... been there, done that... This is a Breakfast Pizza cooked in a seasoned cast-iron skillet. This recipe is a piece of cake to make, and very satisfying.


Start with the pizza crust. This isn't just any crust... this is a crumbly biscuit crust that will hold your toppings. Mix flour, bread, and milk into a dough, then spread out your dough with a rolling pin, and place in the bottom of a cast iron skillet.


Next, the toppings! Bacon! Eggs! Cheese!


The finished product will blow your mind!

Skillet Breakfast Pizza

Crust:
4 tablespoons butter
1 cup flour
1/4 cup milk
1 tsp salt

Toppings:
6 eggs
2 cups sharp cheddar cheese, divided
8 pieces bacon, sliced in 1/4-1/2 inch slices

Preheat oven at 450*.

For the crust, combine butter and flour together with finger tips. Combine until you get the texture of coarse sand, then add salt and milk. Mix, and then roll onto a flat surface, and knead for about a minute. Next, roll the dough out slightly, and place in a buttered cast-iron skillet. Then, use your fingers to spread the dough to evenly coat the bottom of the skillet. Bake at 425* until golden brown or about 18 minutes.

While your crust is baking, start on the bacon. Slice 8 pieces of bacon into 1/4-1/2 inch pieces, and cook in a skillet under medium heat until crispy. Set bacon aside, while reserving bacon grease in the pan. Next, whisk six eggs together, and pour into pan. Next, stir with spatula until eggs are scrambled and cooked.

After crust is finished, turn oven off, and turn broiler on high.

Top the crust with one cup of cheese, then add the eggs. Next, add another layer of cheese, and then complete with bacon on top.
